Lemon Squares Recipe

As promised in my newest photo upload, here's the recipe for Lemon Squares:

1/2 cup melted butter (approx. 250 g)
1 cup flour
1/4 cup sugar

2 eggs
1 cup sugar
2 Tblsp. flour
rind and juice of 1 lemon (approx. 30 ml)

Mix the first three ingredients until they make a crumbly dough. Press the dough evenly into a pan, so that it covers the bottom of the pan evenly.
Bake at 350° F (around 180° C) - I use upper and lower heat, not convection (convection browns it too quickly) for approx 25-30 minutes, or until lightly browned.

Beat together the last four ingredients until they form a fluffy cream. Pour over hot, baked crust.
Bake at around 350° F (I use 150° C) for 35-40 minutes.

You *have* to keep an eye on the baking during that second part. It burns easily and then the inside will still be totally liquid, but the crust brown and burned. To prevent that, I've decided to use a somewhat lower temperature for the second part of the baking.

After around 35 minutes, test the consistency with a toothpick. The upper crust should be crunchy (like a baiser or meringe) and inside it should be *just* a bit soft. Don't bake all the way through, or it will end up being very hard.

Take out of the oven. Let cool and then cover with confectioner's powder. Cut into squares. Die of sugar shock. ^___^
